"HEAVENLY ALMOND CREAMS
"A good friend of mine gave me this recipe more that 20 years ago," writes Kathi Wheelwright. "They are a favorite candy at Christmastime. I always get many compliments, and no one can believe I made them myself."
1 1/2 sticks melted "burned" butter
1 square soft butter
2 pounds powdered sugar
1 14-ounce can sweetened condensed milk
1 teaspoon vanilla
Almond flavoring to taste (about 1/2 teaspoon)
Melted dipping chocolate
Chopped almonds
Make burned butter by cooking the 1 1/2 sticks of butter in small frying pan until it bubbles and turns light brown.
Combine the "burned butter" and the next five ingredients. Mix well with a large mixer. Refrigerate until set up, about 2 hours. Roll into small balls, about the size of a cherry chocolate. Refrigerate again for an hour, then cover with melted chocolate and roll in finely chopped almonds. Makes 5 to 6 dozen balls. — Kathi Wheelwright, South Jordan"

You don't have to burn the butter, or even melt it. You don't have to add almond flavoring--you can use any flavoring or even just leave it with vanilla. You can skip the chopped almonds. You can also add 1/4 c cocoa powder for chocolate cream filling.
