Brownie Balls

This recipe requires an ebelskiver pan.

1 bag chocolate chips
3 c mini marshmallows
1 c butter or margarine
2 c flour
4 eggs
3 tsp vanilla
1/2 tsp baking powder
1/8 tsp baking soda
couple of dashes of salt

Melt chocolate, marshmallows, and butter, stirring occasionally, until smooth (or nearly so). Cool. Stir in eggs and vanilla until mixed. Add flour, baking powder, baking soda, and salt. Stir until mixed.

Heat ebelskiver pan to medium (not as hot as ebelskivers). Fill each well 3/4 full. Cook until set on sides and bottom, then turn once or twice with a knitting needle or bamboo skewer. Cook until skewer comes out relatively clean (not wet).

You cook and turn them like ebelskivers, but brownies are more tender and therefore must cook at a lower temperature, a little slower and longer, and be turned more carefully, using more of a scooping motion than a stab-and-flip motion.

The come out looking like brownie cream puffs. Would be excellent split in half and filled with cream or ice cream.

(If you want to make a pan of brownies, omit 1 c of flour and the baking soda. Bake at 350 for 20-30 minutes, until brownies are done.)
