Succesfully mixed-and-matched recipes to make Beef and Broccoli, and I don't want to forget what I did
1-2 lb thin-sliced beef
4-5 c lightly steamed (tender crisp) broccoli florets (about half a big bag)
1 small onion, diced
1/3 c water
hot cooked rice
Marinade for beef:
2 tbsp cornstarch
2 tbsp water
1 tsp garlic powder
1/4 tsp baking soda (opt. but makes the beef so so tender)
Sauce:
1/3 c soy sauce
1/3 c brown sugar
1 1/2 tbsp corn starch
1/2 tsp powdered ginger
1 tbsp black bean paste (optional, but highly recommended)
1 tbsp sesame chili oil (adjust to desired heat)
1 tbsp mango rice vinegar
heaping 1/8 tsp black pepper
Mix together marinade ingredients and stir beef in until coated. Set aside.

Mix sauce ingredients in small bowl and set aside.
Stir fry marinated beef strips in large frying pan or wok over medium high or high heat until almost done but not quite. Remove from pan and set aside.
Stir fry onions in same pan until lightly transparent. Add beef and broccoli back into the pan, plus 1/3 c water and sauce. Cook 2-3 minutes on medium high until sauce thickens. Serve immediately over hot cooked rice.
I suspect you can cook the onions with the beef to no bad end, and some recipes have you cook the onions and raw broccoli together, without steaming the broccoli first. Worth trying. You definitely don't want overcooked broccoli in this.
