Two-Sauce Baked Ziti

 Two-Sauce Baked Ziti

16 oz ziti or penne (or other pasta)
1 small onion (optional)
oil (to cook onion in)
1-1.5 lb ground beef
1 jar pasta sauce (24-32 oz)
1/4 tsp baking soda
3 Tbsp butter or margarine
3 Tbsp flour
3 c milk
1/2-1 c parmesan (grated or the cheap powdered kind)
1/8 tsp pepper
1/2 tsp salt
1 tsp dried basil or italian seasoning
8 oz grated cheddar or mozarella (or other cheese)

Cook pasta according to package directions and drain. While the pasta boils, in a large frying pan, cook onion, if using, until soft in oil. Add ground beef, sprinkle lightly with baking soda, and cook over medium or high heat until brown. Drain the fat off. Add pasta sauce and stir. Set aside. In a sauce pot, melt butter. Stir in flour and cook 2 minutes on  medium-low. Add milk a little at a time, whisking constantly. Heat white sauce, stirring or whisking to prevent burning, until bubbly and thickened. Add parmesan, salt, pepper, basil/italian seasoning . Stir. Combine cooked pasta and alfredo sauce. Lightly grease 9x13 baking dish (spray oil is fine). Spread alfredo pasta in pan. Spread red meat sauce on top. top with cheese. Bake at 350 for 20-30 min, until bubbly and cheese is melted.
